Ingredients

  • 1 large breadfruit, peeled and diced
  • 1 can (14 oz) coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 2 cups water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is soft and translucent.
  2. Add the curry powder, turmeric, cumin, salt, and black pepper to the pot. Stir well to coat the onions and spices.
  3. Add the diced breadfruit to the pot and stir to combine with the spiced onion mixture.
  4. Pour in the coconut milk and water. Stir to combine all the ingredients.
  5. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let the kukau simmer for 20-25 minutes, or until the breadfruit is tender.
  6. Once the breadfruit is tender, taste the kukau and adjust the seasoning if needed. Serve hot and enjoy!
