Kukau (breadfruit And Coconut Curry)
Kukau is a traditional Palauan dish that combines the rich flavors of breadfruit and coconut in a delicious curry. This hearty and satisfying dish is perfect for a cozy family meal or a gathering with friends.
Ingredients
- 1 large breadfruit, peeled and diced
- 1 can (14 oz) coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 thumb-sized piece of ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 2 cups water
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is soft and translucent.
- Add the curry powder, turmeric, cumin, salt, and black pepper to the pot. Stir well to coat the onions and spices.
- Add the diced breadfruit to the pot and stir to combine with the spiced onion mixture.
- Pour in the coconut milk and water. Stir to combine all the ingredients.
- Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let the kukau simmer for 20-25 minutes, or until the breadfruit is tender.
- Once the breadfruit is tender, taste the kukau and adjust the seasoning if needed. Serve hot and enjoy!
