Ingredients
- 1 breadfruit, peeled and grated
- 2 taro roots, peeled and grated
- 1 onion, finely chopped
- 2 eggs
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Oil for frying
Instructions
- In a large bowl, combine the grated breadfruit, grated taro, and chopped onion.
- In a separate bowl, beat the eggs and then add them to the breadfruit and taro mixture.
- Add the flour, salt, and black pepper to the mixture and stir until well combined.
- Heat oil in a frying pan over medium heat.
- Scoop spoonfuls of the mixture and carefully drop them into the hot oil, flattening them slightly with the back of the spoon.
- Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
- Remove the fritters from the oil and place them on a paper towel to drain any excess oil.
- Serve the kukau hot and enjoy!
