Ingredients

  • 1 breadfruit, peeled and grated
  • 2 taro roots, peeled and grated
  • 1 onion, finely chopped
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying

Instructions

  1. In a large bowl, combine the grated breadfruit, grated taro, and chopped onion.
  2. In a separate bowl, beat the eggs and then add them to the breadfruit and taro mixture.
  3. Add the flour, salt, and black pepper to the mixture and stir until well combined.
  4. Heat oil in a frying pan over medium heat.
  5. Scoop spoonfuls of the mixture and carefully drop them into the hot oil, flattening them slightly with the back of the spoon.
  6. Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
  7. Remove the fritters from the oil and place them on a paper towel to drain any excess oil.
