Kukhura Ko Achar (sikkimese Style Spicy Chicken)

Ingredients

  • 500g chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 4-5 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon fenugreek seeds
  • 1/2 cup mustard oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat mustard oil in a pan and add cumin seeds, mustard seeds, and fenugreek seeds. Sauté until they crackle.
  2. Add chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and green chilies. Sauté for a few minutes.
  4. Add turmeric powder and mix well.
  5. Add the chicken pieces and cook until they are slightly browned.
  6. Add chopped tomatoes and salt. Cook until the tomatoes are soft and the oil separates.
  7. Garnish with fresh coriander leaves and serve hot.
