Kuksu (creamy Yogurt Soup)

Ingredients

  • 1 cup plain yogurt
  • 4 cups chicken or vegetable broth
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 1 potato, diced
  • 1/2 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the broth, onion, carrots, and potato. Bring to a boil and then reduce heat to simmer for 15 minutes, or until the vegetables are tender.
  2. In a bowl, whisk the yogurt until smooth. Gradually add a ladle of the hot broth to the yogurt, whisking constantly to temper it.
  3. Pour the yogurt mixture into the pot with the vegetables and broth, stirring constantly.
  4. Add the fresh dill and season with salt and pepper to taste. Simmer for an additional 5 minutes.
  5. Remove from heat and let the soup cool slightly before serving.
