Kuksu (creamy Yogurt Soup)
Kuksu is a traditional Uzbek creamy yogurt soup that is perfect for a comforting and hearty meal. This soup is packed with flavors and is easy to make, making it a popular choice for a cozy dinner.
Ingredients
- 1 cup plain yogurt
- 4 cups chicken or vegetable broth
- 1 onion, finely chopped
- 2 carrots, diced
- 1 potato, diced
- 1/2 cup fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large pot, combine the broth, onion, carrots, and potato. Bring to a boil and then reduce heat to simmer for 15 minutes, or until the vegetables are tender.
- In a bowl, whisk the yogurt until smooth. Gradually add a ladle of the hot broth to the yogurt, whisking constantly to temper it.
- Pour the yogurt mixture into the pot with the vegetables and broth, stirring constantly.
- Add the fresh dill and season with salt and pepper to taste. Simmer for an additional 5 minutes.
- Remove from heat and let the soup cool slightly before serving.
