Ingredients

  • 6 eggs
  • 1 cup chopped fresh cilantro
  • 1 cup chopped fresh dill
  • 1 cup chopped fresh parsley
  • 1 small onion, finely chopped
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, whisk together the eggs, cilantro, dill, parsley, onion, turmeric, cumin, salt, and black pepper.
  2. Heat the olive oil in a non-stick skillet over medium heat.
  3. Pour the egg mixture into the skillet and cook for 5-7 minutes, or until the edges are set.
  4. Using a spatula, gently lift the edges of the kuku to allow the uncooked eggs to flow underneath.
  5. Cover the skillet and cook for an additional 10-12 minutes, or until the kuku is completely set.
  6. Slide the kuku onto a serving plate and cut into wedges. Serve hot or at room temperature.
