Kuku (fragrant Herb Frittata)
Kuku is a traditional Bukharan Jewish dish that is similar to a frittata, packed with fragrant herbs and spices. This dish is a flavorful and nutritious addition to any meal.
Ingredients
- 6 eggs
- 1 cup chopped fresh cilantro
- 1 cup chopped fresh dill
- 1 cup chopped fresh parsley
- 1 small onion, finely chopped
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a large bowl, whisk together the eggs, cilantro, dill, parsley, onion, turmeric, cumin, salt, and black pepper.
- Heat the olive oil in a non-stick skillet over medium heat.
- Pour the egg mixture into the skillet and cook for 5-7 minutes, or until the edges are set.
- Using a spatula, gently lift the edges of the kuku to allow the uncooked eggs to flow underneath.
- Cover the skillet and cook for an additional 10-12 minutes, or until the kuku is completely set.
- Slide the kuku onto a serving plate and cut into wedges. Serve hot or at room temperature.
