Kuku (fragrant Herb Omelette)
Kuku is a traditional Tajik dish that is a fragrant herb omelette packed with flavors. It is a popular dish in Tajik cuisine and is often served as a main course or as a side dish.
Ingredients
- 6 eggs
- 1 cup chopped fresh herbs (such as cilantro, parsley, and dill)
- 1 small onion, finely chopped
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large bowl, beat the eggs.
- Add the chopped herbs, onion, turmeric, cumin, salt, and pepper to the beaten eggs. Mix well.
- Heat the vegetable oil in a non-stick skillet over medium heat.
- Pour the egg mixture into the skillet and spread it evenly.
- Cook for 8-10 minutes or until the bottom is golden brown.
- Using a large plate, carefully flip the omelette and slide it back into the skillet to cook the other side for another 8-10 minutes.
- Once both sides are golden brown and the omelette is cooked through, remove from the skillet and let it cool for a few minutes.
- Slice the kuku into wedges and serve hot or at room temperature.
