Kuku Kule (torit Tamarind Chicken)
Kuku Kule, also known as Torit Tamarind Chicken, is a traditional dish from South Sudanese Cuisine that is bursting with flavor. The combination of tangy tamarind and aromatic spices makes this dish a true delight for the senses.
Ingredients
- 4 chicken thighs
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon tamarind paste
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 1 cup chicken broth
- Fresh cilantro for garnish
Instructions
- Season the chicken thighs with salt, pepper, ground coriander, cumin, paprika, and turmeric.
- Heat vegetable oil in a large skillet over medium heat. Add the seasoned chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 2 minutes.
- Stir in the tamarind paste and chicken broth, then return the chicken thighs to the skillet. Cover and simmer for 30 minutes, or until the chicken is cooked through and the sauce has thickened.
- Garnish with fresh cilantro before serving.
