Kuku Malu (kapoeta Coconut Curry)
Kuku Malu, also known as Kapoeta Coconut Curry, is a flavorful and aromatic dish from South Sudanese Cuisine. This creamy coconut curry is made with tender chicken and a blend of aromatic spices, creating a rich and satisfying meal.
Ingredients
- 1.5 lbs chicken, cut into pieces
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 1 can (14 oz) coconut milk
- 2 tomatoes, diced
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp turmeric
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Fresh cilantro for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are soft and translucent.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the diced tomatoes, ground coriander, ground cumin, turmeric, cayenne pepper, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Pour in the coconut milk and bring the curry to a gentle simmer. Cover the pot and let it cook for 45 minutes, or until the chicken is tender.
- Once the chicken is cooked through, adjust the seasoning if needed. Garnish with fresh cilantro before serving.
