Ingredients

  • 6 large eggs
  • 1 cup chopped parsley
  • 1 cup chopped cilantro
  • 1/2 cup chopped dill
  • 1/2 cup chopped chives
  • 1/2 cup chopped spinach
  • 1/2 cup chopped fenugreek leaves
  • 1/2 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, beat the eggs.
  2. Add all the chopped herbs, turmeric, salt, and black pepper to the eggs. Mix well.
  3. Heat the olive oil in a non-stick skillet over medium heat.
  4. Pour the egg mixture into the skillet and spread it evenly.
  5. Cook for about 10-12 minutes until the bottom is set.
  6. Carefully flip the omelette using a large plate, then slide it back into the skillet to cook the other side for another 10-12 minutes.
  7. Once both sides are golden and the omelette is cooked through, remove from the heat.
  8. Slice the Kuku Sabzi into wedges and serve hot or at room temperature.
