Kuku Sabzi (persian Herb Omelette)

Ingredients
- 6 large eggs
- 1 cup chopped parsley
- 1 cup chopped cilantro
- 1/2 cup chopped dill
- 1/2 cup chopped chives
- 1/2 cup chopped spinach
- 1/2 cup chopped fenugreek leaves
- 1/2 teaspoon turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a large bowl, beat the eggs.
- Add all the chopped herbs, turmeric, salt, and black pepper to the eggs. Mix well.
- Heat the olive oil in a non-stick skillet over medium heat.
- Pour the egg mixture into the skillet and spread it evenly.
- Cook for about 10-12 minutes until the bottom is set.
- Carefully flip the omelette using a large plate, then slide it back into the skillet to cook the other side for another 10-12 minutes.
- Once both sides are golden and the omelette is cooked through, remove from the heat.
- Slice the Kuku Sabzi into wedges and serve hot or at room temperature.
