Ingredients

  • 4 chicken thighs
  • 2 ripe mangoes, peeled and diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 cup chicken broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt, pepper, curry powder, and paprika.
  2. Heat the vegetable oil in a large pan over medium heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the pan and set aside.
  3. In the same pan, add the chopped onion, garlic, and ginger. Cook until the onion is soft and translucent, about 5 minutes.
  4. Add the diced mangoes to the pan and cook for another 5 minutes, stirring occasionally.
  5. Return the chicken thighs to the pan and pour in the chicken broth. Bring to a simmer, then cover and cook for 25-30 minutes, or until the chicken is fully cooked and the sauce has thickened.
  6. Serve the Kuku wa Embe hot with rice or flatbread.
