Kuku Wa Embe (tanzanian Mango Chicken)
Kuku wa Embe is a delicious Tanzanian dish that combines the sweetness of mangoes with the savory flavors of chicken. This dish is perfect for a special occasion or a family dinner.
Ingredients
- 4 chicken thighs
- 2 ripe mangoes, peeled and diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ginger, grated
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 cup chicken broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt, pepper, curry powder, and paprika.
- Heat the vegetable oil in a large pan over medium heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the pan and set aside.
- In the same pan, add the chopped onion, garlic, and ginger. Cook until the onion is soft and translucent, about 5 minutes.
- Add the diced mangoes to the pan and cook for another 5 minutes, stirring occasionally.
- Return the chicken thighs to the pan and pour in the chicken broth. Bring to a simmer, then cover and cook for 25-30 minutes, or until the chicken is fully cooked and the sauce has thickened.
- Serve the Kuku wa Embe hot with rice or flatbread.
