Kuku Wa Ndizi (zanzibar Banana Curry)

Ingredients

  • 2 ripe bananas, peeled and sliced
  • 1 lb chicken, cut into pieces
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ginger, grated
  • 1 can (14 oz) coconut milk
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  2. Add the chicken pieces to the pot and cook until browned on all sides.
  3. Stir in the curry powder, turmeric, cumin, coriander, and chili powder, and cook for 1-2 minutes to toast the spices.
  4. Pour in the coconut milk and bring the mixture to a simmer. Add the sliced bananas and season with salt and pepper.
  5. Cover the pot and let the curry simmer for 20-25 minutes, or until the chicken is cooked through and the bananas are tender.
  6. Adjust the seasoning if needed, then serve the Kuku wa Ndizi hot, garnished with fresh cilantro.
