Kuku Wa Ndizi (zanzibar Banana Curry)
Kuku wa Ndizi, also known as Zanzibar Banana Curry, is a popular dish in Tanzanian cuisine. This flavorful and aromatic curry combines ripe bananas with tender chicken in a rich and creamy coconut sauce, creating a unique and delicious meal.
Ingredients
- 2 ripe bananas, peeled and sliced
- 1 lb chicken, cut into pieces
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ginger, grated
- 1 can (14 oz) coconut milk
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp chili powder
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the curry powder, turmeric, cumin, coriander, and chili powder, and cook for 1-2 minutes to toast the spices.
- Pour in the coconut milk and bring the mixture to a simmer. Add the sliced bananas and season with salt and pepper.
- Cover the pot and let the curry simmer for 20-25 minutes, or until the chicken is cooked through and the bananas are tender.
- Adjust the seasoning if needed, then serve the Kuku wa Ndizi hot, garnished with fresh cilantro.
