Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, diced
  • 1 sprig curry leaves
  • 2 cinnamon sticks
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon turmeric
  • 2 tablespoons chili powder
  • 1 can coconut milk
  • Salt to taste
  • 3 tablespoons vegetable oil

Instructions

  1. Heat oil in a large pot over medium heat. Add onions, garlic, ginger, curry leaves, and cinnamon sticks. Sauté until the onions are golden brown.
  2. Add cumin seeds, fennel seeds, turmeric, and chili powder. Stir well to combine.
  3. Add the chicken pieces and coat them with the spice mixture. Cook for 5 minutes.
  4. Pour in the coconut milk and add the diced tomatoes. Season with salt and bring to a simmer. Cover and cook for 45 minutes, stirring occasionally.
  5. Once the chicken is tender and the curry has thickened, remove from heat and let it rest for a few minutes before serving.
