Kukul Mas Curry (spicy Ceylon Chicken Curry)

Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 tomatoes, diced
- 1 sprig curry leaves
- 2 cinnamon sticks
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon turmeric
- 2 tablespoons chili powder
- 1 can coconut milk
- Salt to taste
- 3 tablespoons vegetable oil
Instructions
- Heat oil in a large pot over medium heat. Add onions, garlic, ginger, curry leaves, and cinnamon sticks. Sauté until the onions are golden brown.
- Add cumin seeds, fennel seeds, turmeric, and chili powder. Stir well to combine.
- Add the chicken pieces and coat them with the spice mixture. Cook for 5 minutes.
- Pour in the coconut milk and add the diced tomatoes. Season with salt and bring to a simmer. Cover and cook for 45 minutes, stirring occasionally.
- Once the chicken is tender and the curry has thickened, remove from heat and let it rest for a few minutes before serving.
