Kukul Mas Curry (sri Lankan Chicken Curry With Coconut Milk)

Ingredients
- 1.5 lbs chicken, cut into pieces
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 2 tomatoes, chopped
- 1 can (14 oz) coconut milk
- 2 tbsp vegetable oil
- 1 cinnamon stick
- 2 cardamom pods
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat. Add cinnamon stick, cardamom pods, and cumin seeds. Sauté until fragrant.
- Add chopped onions, garlic, and ginger. Cook until the onions are soft and translucent.
- Add the chicken pieces and cook until they are browned on all sides.
- Stir in coriander powder, turmeric powder, and red chili powder. Cook for a few minutes until the spices are fragrant.
- Add the chopped tomatoes and cook until they are soft and have released their juices.
- Pour in the coconut milk and season with salt. Bring to a simmer and cook for 25-30 minutes until the chicken is cooked through and the sauce has thickened.
- Garnish with fresh cilantro and serve hot with steamed rice or roti.
