Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, sliced
  • 1 tsp chili powder
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • Salt to taste
  • Freshly ground black pepper to taste
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the sliced onion, minced garlic, grated ginger, and green chilies. Sauté until the onions are soft and translucent.
  3. Add the chicken pieces to the pan and cook until they are browned on all sides.
  4. Stir in the chili powder, turmeric powder, cumin seeds, and fennel seeds. Season with salt and pepper.
  5. Cook for another 5-7 minutes, stirring occasionally, until the chicken is cooked through.
  6. Drizzle the lime juice over the chicken and stir to combine.
  7. Garnish with fresh cilantro and serve hot.
