Kukul Varuval (spicy Sri Lankan Chicken Stir-fry)
Kukul Varuval is a delicious and spicy Sri Lankan chicken stir-fry that is packed with flavor and perfect for a quick and easy weeknight meal.
Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 1 onion, thinly sliced
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 green chilies, sliced
- 1 tsp chili powder
- 1 tsp turmeric powder
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- Salt to taste
- Freshly ground black pepper to taste
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the sliced onion, minced garlic, grated ginger, and green chilies. Sauté until the onions are soft and translucent.
- Add the chicken pieces to the pan and cook until they are browned on all sides.
- Stir in the chili powder, turmeric powder, cumin seeds, and fennel seeds. Season with salt and pepper.
- Cook for another 5-7 minutes, stirring occasionally, until the chicken is cooked through.
- Drizzle the lime juice over the chicken and stir to combine.
- Garnish with fresh cilantro and serve hot.
