Kukulhu Korma (maldivian Chicken Korma)
Kukulhu Korma, also known as Maldivian Chicken Korma, is a rich and flavorful dish that is a staple in Maldivian cuisine. This creamy and aromatic chicken curry is a perfect blend of spices and coconut milk, creating a delicious and comforting meal.
Ingredients
- 1 kg chicken, cut into pieces
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 cup coconut milk
- 1/2 cup plain yogurt
- 2 tomatoes, chopped
- 2 green chilies, sliced
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pot over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the chicken pieces to the pot and cook until they are browned on all sides.
- Stir in the turmeric, coriander, cumin, and chili powders, and cook for a few minutes to toast the spices.
- Pour in the coconut milk and yogurt, and add the chopped tomatoes and green chilies. Season with salt.
- Cover the pot and let the korma simmer for 30-35 minutes, or until the chicken is cooked through and the sauce has thickened.
- Sprinkle garam masala over the korma and garnish with fresh cilantro before serving.
