Ingredients
- 4 boneless, skinless chicken breasts
- 1 can (14 oz) coconut milk
- 2 limes, juiced and zested
- 3 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons chopped fresh cilantro
Instructions
- In a bowl, combine coconut milk, lime juice, lime zest, minced garlic, turmeric, cumin, salt, and pepper.
- Add the chicken breasts to the marinade and let them marinate for 30 minutes.
- Heat a large skillet over medium heat and add the marinated chicken breasts along with the marinade.
- Cook for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
- Sprinkle with chopped cilantro before serving.
