Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (14 oz) coconut milk
  • 2 limes, juiced and zested
  • 3 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. In a bowl, combine coconut milk, lime juice, lime zest, minced garlic, turmeric, cumin, salt, and pepper.
  2. Add the chicken breasts to the marinade and let them marinate for 30 minutes.
  3. Heat a large skillet over medium heat and add the marinated chicken breasts along with the marinade.
  4. Cook for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
  5. Sprinkle with chopped cilantro before serving.
