Kukulhu Kulhi Lime (coconut Lime Chicken Skewers)

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into chunks
  • 1 cup coconut milk
  • 3 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine the coconut milk, lime juice, garlic, cumin, turmeric, paprika, salt, and black pepper to make the marinade.
  2. Add the chicken chunks to the marinade, cover, and refrigerate for at least 1 hour.
  3. Preheat a stovetop grill or skillet over medium-high heat.
  4. Thread the marinated chicken chunks onto the soaked wooden skewers.
  5. Grill the chicken skewers for 6-8 minutes on each side, or until fully cooked and slightly charred.
  6. Serve the Kukulhu Kulhi Lime hot with rice or naan bread.
