Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into chunks
- 1 cup coconut milk
- 3 tablespoons fresh lime juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine the coconut milk, lime juice, garlic, cumin, turmeric, paprika, salt, and black pepper to make the marinade.
- Add the chicken chunks to the marinade, cover, and refrigerate for at least 1 hour.
- Preheat a stovetop grill or skillet over medium-high heat.
- Thread the marinated chicken chunks onto the soaked wooden skewers.
- Grill the chicken skewers for 6-8 minutes on each side, or until fully cooked and slightly charred.
- Serve the Kukulhu Kulhi Lime hot with rice or naan bread.
