Kukulhu Kulhi Lime (coconut Lime Shrimp)

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 can (14 oz) coconut milk
  • 2 limes, juiced and zested
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 red chili, thinly sliced
  • 2 tablespoons coconut oil
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat the coconut oil over medium heat.
  2. Add the minced garlic, chopped onion, and sliced red chili. Sauté until the onions are translucent.
  3. Add the shrimp to the pan and cook for 2-3 minutes on each side until they turn pink.
  4. Pour in the coconut milk, lime juice, and lime zest. Stir well to combine.
  5. Simmer the mixture for 5-7 minutes until the sauce thickens slightly.
  6. Season with salt and pepper to taste.
  7. Serve the Kukulhu Kulhi Lime hot, garnished with additional lime zest and sliced red chili if desired.
