Kukulhu Kulhi Lime (coconut Lime Shrimp)

Ingredients
- 1 lb shrimp, peeled and deveined
- 1 can (14 oz) coconut milk
- 2 limes, juiced and zested
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 red chili, thinly sliced
- 2 tablespoons coconut oil
- Salt and pepper to taste
Instructions
- In a large pan, heat the coconut oil over medium heat.
- Add the minced garlic, chopped onion, and sliced red chili. Sauté until the onions are translucent.
- Add the shrimp to the pan and cook for 2-3 minutes on each side until they turn pink.
- Pour in the coconut milk, lime juice, and lime zest. Stir well to combine.
- Simmer the mixture for 5-7 minutes until the sauce thickens slightly.
- Season with salt and pepper to taste.
- Serve the Kukulhu Kulhi Lime hot, garnished with additional lime zest and sliced red chili if desired.
