Kukulhu Kulhi Riha (coconut Curry Shrimp)
Kukulhu Kulhi Riha, also known as Coconut Curry Shrimp, is a popular dish in Maldivian cuisine. This flavorful and aromatic curry is made with succulent shrimp cooked in a rich coconut milk-based sauce, infused with a blend of traditional spices.
Ingredients
- 1 lb (450g) shrimp, peeled and deveined
- 1 cup (240ml) coconut milk
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 tomato, diced
- 1 green chili, sliced
- 1 tsp turmeric powder
- 1 tsp chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt to taste
- 2 tbsp vegetable oil
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a pan over medium heat.
- Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the diced tomato and green chili. Cook until the tomato is softened.
- Stir in the turmeric, chili powder, cumin powder, and coriander powder. Cook for 1-2 minutes to toast the spices.
- Pour in the coconut milk and bring the mixture to a gentle simmer.
- Add the shrimp to the pan and cook for 5-7 minutes, or until the shrimp is pink and cooked through.
- Season with salt to taste and garnish with fresh cilantro.
- Serve the Kukulhu Kulhi Riha hot with steamed rice or roti.
