Kukulhu Kulhi Riha (coconut Curry Shrimp)

Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 1 cup (240ml) coconut milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tomato, diced
  • 1 green chili, sliced
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  3. Add the diced tomato and green chili. Cook until the tomato is softened.
  4. Stir in the turmeric, chili powder, cumin powder, and coriander powder. Cook for 1-2 minutes to toast the spices.
  5. Pour in the coconut milk and bring the mixture to a gentle simmer.
  6. Add the shrimp to the pan and cook for 5-7 minutes, or until the shrimp is pink and cooked through.
  7. Season with salt to taste and garnish with fresh cilantro.
  8. Serve the Kukulhu Kulhi Riha hot with steamed rice or roti.
