Kukulhu Riha (maldivian Chicken Curry)

Ingredients

  • 1 kg chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 1 cup coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • Salt to taste
  • 2 tbsp vegetable oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  3. Add curry powder, turmeric powder, and chili powder. Stir well to combine.
  4. Add chicken pieces and cook until they are browned on all sides.
  5. Add chopped tomatoes and cook for 5 minutes.
  6. Pour in the coconut milk and season with salt. Cover and simmer for 30 minutes, or until the chicken is cooked through.
  7. Garnish with fresh coriander leaves before serving.
