Kukulhu Riha (maldivian Chicken Curry)
Kukulhu Riha is a traditional Maldivian chicken curry that is rich in flavor and spices. This aromatic dish is a staple in Maldivian cuisine and is perfect for a hearty meal.
Ingredients
- 1 kg chicken, cut into pieces
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 2 tomatoes, chopped
- 1 cup coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric powder
- 1 tsp chili powder
- Salt to taste
- 2 tbsp vegetable oil
- Fresh coriander leaves for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add curry powder, turmeric powder, and chili powder. Stir well to combine.
- Add chicken pieces and cook until they are browned on all sides.
- Add chopped tomatoes and cook for 5 minutes.
- Pour in the coconut milk and season with salt. Cover and simmer for 30 minutes, or until the chicken is cooked through.
- Garnish with fresh coriander leaves before serving.
