Kukulhu Satay (maldivian Chicken Satay)

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into strips
  • 1/4 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the coconut milk, soy sauce, brown sugar, garlic, cumin, coriander, turmeric, chili powder, vegetable oil, salt, and pepper. Mix well to make the marinade.
  2. Add the chicken strips to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill or a grill pan over medium-high heat. Thread the marinated chicken strips onto the soaked bamboo skewers.
  4. Grill the chicken satay for 3-4 minutes on each side, or until cooked through and slightly charred.
  5. Serve the Kukulhu Satay hot with steamed rice and a side of spicy peanut sauce for dipping.
