Kukulhu Satay (maldivian Chicken Satay)
Kukulhu Satay, also known as Maldivian Chicken Satay, is a popular dish in Maldivian cuisine. This flavorful and aromatic chicken dish is perfect for grilling or pan-frying, and it's often served with a side of rice and a tangy dipping sauce.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into strips
- 1/4 cup coconut milk
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon chili powder
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Bamboo skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the coconut milk, soy sauce, brown sugar, garlic, cumin, coriander, turmeric, chili powder, vegetable oil, salt, and pepper. Mix well to make the marinade.
- Add the chicken strips to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill or a grill pan over medium-high heat. Thread the marinated chicken strips onto the soaked bamboo skewers.
- Grill the chicken satay for 3-4 minutes on each side, or until cooked through and slightly charred.
- Serve the Kukulhu Satay hot with steamed rice and a side of spicy peanut sauce for dipping.
