Kukupa (pigeon) Soup
Kukupa soup is a traditional dish from Niuean cuisine, made with pigeon as the main ingredient. This hearty and flavorful soup is perfect for a comforting meal, especially during colder months.
Ingredients
- 1 whole kukupa (pigeon), cleaned and cut into pieces
- 2 onions, chopped
- 3 tomatoes, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup coconut cream
- 6 cups water
- Salt and pepper to taste
Instructions
- In a large pot, add the kukupa pieces, onions, and water. Bring to a boil, then reduce heat and simmer for 1 hour.
- Add the tomatoes, carrots, and potatoes to the pot. Simmer for an additional 30 minutes.
- Stir in the coconut cream and season with salt and pepper. Simmer for another 15 minutes.
- Adjust seasoning if needed, then remove from heat and let it sit for a few minutes before serving.
