Kukupa (pigeon) Soup

Ingredients

  • 1 whole kukupa (pigeon), cleaned and cut into pieces
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 cup coconut cream
  • 6 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, add the kukupa pieces, onions, and water. Bring to a boil, then reduce heat and simmer for 1 hour.
  2. Add the tomatoes, carrots, and potatoes to the pot. Simmer for an additional 30 minutes.
  3. Stir in the coconut cream and season with salt and pepper. Simmer for another 15 minutes.
  4. Adjust seasoning if needed, then remove from heat and let it sit for a few minutes before serving.
