Kukupa (pigeon) Stir-fry
Kukupa (Pigeon) Stir-Fry is a traditional Niuean dish that is both flavorful and nutritious. This stir-fry is a perfect combination of tender kukupa meat and fresh vegetables, all cooked to perfection in a savory sauce.
Ingredients
- 1 kg kukupa meat, diced
- 2 cups mixed vegetables (bell peppers, carrots, snow peas)
- 3 cloves garlic, minced
- 1 onion, sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a wok or large skillet over high heat.
- Add diced kukupa meat and stir-fry for 5-7 minutes until browned. Remove the meat from the wok and set aside.
- In the same wok, add a bit more oil if needed and sauté the garlic and onion until fragrant.
- Add the mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
- In a small bowl, mix together soy sauce, oyster sauce, sesame oil, and cornstarch. Pour the sauce over the vegetables and stir to combine.
- Return the cooked kukupa meat to the wok and toss everything together until the meat is heated through and the sauce has thickened.
- Season with salt and pepper to taste.
- Remove from heat and serve the kukupa stir-fry hot with steamed rice.
