Ingredients

  • 1 lb fresh white fish, such as snapper or grouper, diced
  • 1 cup lime juice
  • 1/2 cup coconut milk
  • 1 small onion, finely diced
  • 1 tomato, diced
  • 1 cucumber, peeled and diced
  • 1 bell pepper, diced
  • 1 jalapeno pepper, seeded and finely chopped
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a glass or ceramic bowl, combine the diced fish and lime juice. Make sure the fish is completely submerged in the lime juice. Cover and refrigerate for at least 2 hours, stirring occasionally.
  2. After the fish has marinated, drain off the lime juice and add the coconut milk, onion, tomato, cucumber, bell pepper, jalapeno, and cilantro. Season with salt and pepper to taste.
  3. Stir gently to combine all the ingredients. Cover and refrigerate for an additional 30 minutes to allow the flavors to meld.
  4. Serve the kulau chilled, either on its own or with some freshly toasted bread or crackers.
