Kulau (taro And Coconut Soup)
Kulau is a traditional Palauan soup made with taro and coconut milk. This creamy and comforting dish is a staple in Palauan cuisine, often enjoyed as a hearty and nourishing meal.
Ingredients
- 2 lbs taro, peeled and cubed
- 4 cups coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 lemongrass stalk, bruised
- Salt and pepper to taste
Instructions
- In a large pot, combine the taro, coconut milk, onion, garlic, ginger, and lemongrass.
- Bring the mixture to a boil, then reduce the heat and simmer for 25-30 minutes, or until the taro is tender.
- Remove the lemongrass stalk and discard.
- Using an immersion blender, blend the soup until smooth and creamy.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
