Ingredients

  • 2 lbs taro, peeled and cubed
  • 4 cups coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 lemongrass stalk, bruised
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the taro, coconut milk, onion, garlic, ginger, and lemongrass.
  2. Bring the mixture to a boil, then reduce the heat and simmer for 25-30 minutes, or until the taro is tender.
  3. Remove the lemongrass stalk and discard.
  4. Using an immersion blender, blend the soup until smooth and creamy.
  5. Season with salt and pepper to taste.
