Kulebyaka Carnival
Kulebyaka Carnival is a traditional Russian dish that is perfect for special occasions and celebrations. This savory pie is filled with a delicious combination of ingredients and wrapped in flaky pastry, making it a show-stopping centerpiece for any festive table.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup sour cream
- 1 onion, finely chopped
- 1 pound ground beef
- 1/2 cup mushrooms, sliced
- 1/2 cup cooked rice
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 2 hard-boiled eggs, sliced
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Stir in the sour cream until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for 30 minutes.
- In a skillet, cook the onion and ground beef over medium heat until the beef is browned. Add the mushrooms and cook until they release their liquid.
- Stir in the cooked rice, dill, and parsley. Season with salt and pepper to taste. Remove from heat and let the filling cool.
- Preheat the oven to 375°F (190°C). Roll out one disc of dough on a floured surface to fit a 9-inch pie dish. Place the dough in the dish.
- Layer the filling in the pie dish, then arrange the sliced hard-boiled eggs on top.
- Roll out the second disc of dough and place it over the filling. Trim and crimp the edges to seal the pie. Cut a few slits in the top crust for steam to escape.
- Brush the top of the pie with the beaten egg wash. Bake for 45-50 minutes, or until the crust is golden brown.
- Let the Kulebyaka Carnival cool for a few minutes before slicing and serving.
