Kulebyaka Carnival

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup sour cream
  • 1 onion, finely chopped
  • 1 pound ground beef
  • 1/2 cup mushrooms, sliced
  • 1/2 cup cooked rice
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 hard-boiled eggs, sliced
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
  2. Stir in the sour cream until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. In a skillet, cook the onion and ground beef over medium heat until the beef is browned. Add the mushrooms and cook until they release their liquid.
  4. Stir in the cooked rice, dill, and parsley. Season with salt and pepper to taste. Remove from heat and let the filling cool.
  5. Preheat the oven to 375°F (190°C). Roll out one disc of dough on a floured surface to fit a 9-inch pie dish. Place the dough in the dish.
  6. Layer the filling in the pie dish, then arrange the sliced hard-boiled eggs on top.
  7. Roll out the second disc of dough and place it over the filling. Trim and crimp the edges to seal the pie. Cut a few slits in the top crust for steam to escape.
  8. Brush the top of the pie with the beaten egg wash. Bake for 45-50 minutes, or until the crust is golden brown.
  9. Let the Kulebyaka Carnival cool for a few minutes before slicing and serving.
