Kulhi Boakibaa Chutney (spicy Mango Chutney)

Ingredients

  • 2 large ripe mangoes, peeled and diced
  • 1 red onion, finely chopped
  • 2-3 red chilies, finely chopped
  • 1/4 cup vinegar
  • 1/4 cup sugar
  • 1/2 teaspoon salt

Instructions

  1. In a saucepan, combine the diced mangoes, chopped red onion, and red chilies.
  2. Add vinegar, sugar, and salt to the saucepan.
  3. Cook the mixture over medium heat for 10-15 minutes, stirring occasionally, until the mangoes are soft and the chutney thickens.
  4. Remove from heat and let the chutney cool to room temperature.
  5. Transfer the chutney to a sterilized jar and refrigerate until ready to serve.
