Kulhi Boakibaa (coconut Delight)

Ingredients

  • 1 cup grated fresh coconut
  • 1 can (5 oz) tuna, drained
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1/4 cup chopped curry leaves
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder
  • Salt to taste
  • 2 cups rice flour
  • Water as needed
  • Oil for frying

Instructions

  1. In a large bowl, mix together the grated coconut, tuna, chopped onion, green chilies, curry leaves, turmeric powder, chili powder, and salt.
  2. Add the rice flour to the mixture and gradually add water to form a thick batter.
  3. Heat oil in a frying pan over medium heat.
  4. Spoon the batter into the hot oil and fry until golden brown on both sides.
  5. Remove the boakibaa from the oil and drain on paper towels.
  6. Serve hot with a side of chutney or salsa.
