Kulhi Boakibaa (coconut Delight)
Kulhi Boakibaa, also known as Coconut Delight, is a popular Maldivian savory snack made with tuna, coconut, and aromatic spices. This dish is perfect for special occasions, gatherings, or as a tea-time snack.
Ingredients
- 1 cup grated fresh coconut
- 1 can (5 oz) tuna, drained
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1/4 cup chopped curry leaves
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon chili powder
- Salt to taste
- 2 cups rice flour
- Water as needed
- Oil for frying
Instructions
- In a large bowl, mix together the grated coconut, tuna, chopped onion, green chilies, curry leaves, turmeric powder, chili powder, and salt.
- Add the rice flour to the mixture and gradually add water to form a thick batter.
- Heat oil in a frying pan over medium heat.
- Spoon the batter into the hot oil and fry until golden brown on both sides.
- Remove the boakibaa from the oil and drain on paper towels.
- Serve hot with a side of chutney or salsa.
