Kulhi Boakibaa Curry (spicy Chickpea Curry)
Kulhi Boakibaa Curry, also known as Spicy Chickpea Curry, is a popular dish in Maldivian cuisine. This flavorful and aromatic curry is a perfect combination of spices and chickpeas, making it a hearty and satisfying meal.
Ingredients
- 2 cups cooked chickpeas
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 2 tomatoes, chopped
- 1 green chili, sliced
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat vegetable oil in a pan over medium heat.
- Add cumin seeds and let them splutter.
- Add chopped onions, garlic, and ginger. Sauté until the onions are translucent.
- Add chopped tomatoes and green chili. Cook until the tomatoes are soft.
- Stir in coriander powder, turmeric powder, red chili powder, and salt. Cook for 2-3 minutes.
- Add the cooked chickpeas and mix well. Cook for another 5 minutes.
- Sprinkle garam masala and garnish with fresh cilantro.
- Remove from heat and serve hot with steamed rice or flatbread.
