Ingredients

  • 2 cups basmati rice
  • 1 3/4 cups coconut milk
  • 1/4 cup water
  • 1 teaspoon salt
  • Zest of 1 lime
  • Juice of 1 lime

Instructions

  1. In a large pot, combine the basmati rice, coconut milk, water, and salt.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  4. Once the rice is cooked, fluff it with a fork and stir in the lime zest and lime juice.
  5. Remove the pot from the heat and let the rice sit, covered, for 5 minutes to allow the flavors to meld.
