Ingredients
- 2 cups basmati rice
- 1 3/4 cups coconut milk
- 1/4 cup water
- 1 teaspoon salt
- Zest of 1 lime
- Juice of 1 lime
Instructions
- In a large pot, combine the basmati rice, coconut milk, water, and salt.
- Bring the mixture to a boil over medium-high heat.
- Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, fluff it with a fork and stir in the lime zest and lime juice.
- Remove the pot from the heat and let the rice sit, covered, for 5 minutes to allow the flavors to meld.
- Serve the Coconut Lime Rice hot as a delicious side dish.
