Kulhi Boakibaa Roshi (maldivian Coconut Rice)
Kulhi Boakibaa Roshi is a traditional Maldivian dish made with coconut and rice, creating a flavorful and aromatic treat.
Ingredients
- 2 cups basmati rice
- 2 cups coconut milk
- 1 cup water
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1/2 cup grated coconut
- 1/4 cup chopped coriander leaves
- 1/4 cup chopped curry leaves
- Salt to taste
Instructions
- Wash the basmati rice and soak it in water for 30 minutes.
- In a large pot, combine the soaked rice, coconut milk, water, chopped onion, green chilies, grated coconut, coriander leaves, curry leaves, and salt.
- Cook the mixture on medium heat until the rice is tender and the liquid is absorbed, about 30-35 minutes.
- Once cooked, fluff the rice with a fork and let it rest for 5 minutes before serving.
