Ingredients

  • 2 cups basmati rice
  • 2 cups coconut milk
  • 1 cup water
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 cup grated coconut
  • 1/4 cup chopped coriander leaves
  • 1/4 cup chopped curry leaves
  • Salt to taste

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes.
  2. In a large pot, combine the soaked rice, coconut milk, water, chopped onion, green chilies, grated coconut, coriander leaves, curry leaves, and salt.
  3. Cook the mixture on medium heat until the rice is tender and the liquid is absorbed, about 30-35 minutes.
  4. Once cooked, fluff the rice with a fork and let it rest for 5 minutes before serving.
