Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) coconut milk

- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced sweet potatoes, curry powder, and ground cumin to the pot. Stir to combine and cook for 2-3 minutes.
- Pour in the coconut milk and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the sweet potatoes are tender.
- Using an immersion blender, blend the soup until smooth. Season with salt and pepper to taste.
- Serve the Kumala Sup hot, garnished with a drizzle of coconut milk and a sprinkle of fresh herbs if desired.
