Kumala Supu (sweet Potato And Coconut Soup)
Kumala Supu is a traditional Tuvaluan sweet potato and coconut soup that is both hearty and comforting. This dish is perfect for a cozy night in or as a starter for a special meal.
Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (400ml) coconut milk
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the diced sweet potatoes to the pot and pour in the vegetable broth.
- Simmer for 20 minutes or until the sweet potatoes are tender.
- Pour in the coconut milk and stir well. Season with salt and pepper.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
- Simmer for an additional 5-10 minutes, then serve hot.
