Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (400ml) coconut milk
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until fragrant.
  2. Add the diced sweet potatoes to the pot and pour in the vegetable broth.
  3. Simmer for 20 minutes or until the sweet potatoes are tender.
  4. Pour in the coconut milk and stir well. Season with salt and pepper.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
  6. Simmer for an additional 5-10 minutes, then serve hot.
