Kumm Curry (kodava Style Vegetable Stew)
Kumm Curry is a traditional vegetable stew from Kodava Cuisine, a unique and flavorful cuisine from the Kodagu district of Karnataka, India. This hearty and aromatic stew is made with a variety of fresh vegetables and a blend of spices, creating a comforting and nutritious dish.
Ingredients
- 2 potatoes, diced
- 1 cup cauliflower florets
- 1 cup green beans, cut into 1-inch pieces
- 1 carrot, sliced
- 1 onion, finely chopped
- 3 tomatoes, chopped
- 1/2 cup fresh coconut, grated
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 2-3 green chilies, slit
- 1 sprig curry leaves
- 1/2 teaspoon tamarind paste
- 2 tablespoons vegetable oil
- Salt to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and mustard seeds, and let them splutter.
- Add the chopped onions, green chilies, and curry leaves. Sauté until the onions are translucent.
- Add the diced potatoes, cauliflower florets, green beans, and sliced carrots to the pot. Stir well to coat the vegetables with the spices.
- Add the chopped tomatoes, grated coconut, turmeric powder, and tamarind paste. Season with salt to taste.
- Pour enough water to cover the vegetables and bring the stew to a gentle boil. Reduce the heat and let it simmer for about 20-25 minutes, or until the vegetables are tender.
- Once the vegetables are cooked, remove the pot from the heat and let the stew rest for a few minutes before serving.
