Kumm Curry (kodava Style Vegetable Stew)

Ingredients

  • 2 potatoes, diced
  • 1 cup cauliflower florets
  • 1 cup green beans, cut into 1-inch pieces
  • 1 carrot, sliced
  • 1 onion, finely chopped
  • 3 tomatoes, chopped
  • 1/2 cup fresh coconut, grated
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2-3 green chilies, slit
  • 1 sprig curry leaves
  • 1/2 teaspoon tamarind paste
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and mustard seeds, and let them splutter.
  2. Add the chopped onions, green chilies, and curry leaves. Sauté until the onions are translucent.
  3. Add the diced potatoes, cauliflower florets, green beans, and sliced carrots to the pot. Stir well to coat the vegetables with the spices.
  4. Add the chopped tomatoes, grated coconut, turmeric powder, and tamarind paste. Season with salt to taste.
  5. Pour enough water to cover the vegetables and bring the stew to a gentle boil. Reduce the heat and let it simmer for about 20-25 minutes, or until the vegetables are tender.
  6. Once the vegetables are cooked, remove the pot from the heat and let the stew rest for a few minutes before serving.
