Ingredients
- 500g pumpkin, peeled and cubed
- 2 cups chopped mustard greens (xaak)
- 2-3 green chilies, chopped
- 1 tablespoon mustard oil
- 1 teaspoon panch phoron (Bengali five-spice blend)
- 1/2 teaspoon turmeric powder
- Salt to taste
Instructions
- Heat mustard oil in a pan over medium heat.
- Add panch phoron and let it splutter.
- Add green chilies and sauté for a minute.
- Add the cubed pumpkin, turmeric powder, and salt. Mix well.
- Cover and cook for 5 minutes, stirring occasionally.
- Add the chopped mustard greens and mix well.
- Cover and cook for another 10 minutes or until the pumpkin is tender and the greens are wilted.
- Adjust seasoning if needed and serve hot.
