Kumura Xaak Bhaji (pumpkin With Mustard Greens)

Ingredients

  • 500g pumpkin, peeled and cubed
  • 2 cups chopped mustard greens (xaak)
  • 2-3 green chilies, chopped
  • 1 tablespoon mustard oil
  • 1 teaspoon panch phoron (Bengali five-spice blend)
  • 1/2 teaspoon turmeric powder
  • Salt to taste

Instructions

  1. Heat mustard oil in a pan over medium heat.
  2. Add panch phoron and let it splutter.
  3. Add green chilies and sauté for a minute.
  4. Add the cubed pumpkin, turmeric powder, and salt. Mix well.
  5. Cover and cook for 5 minutes, stirring occasionally.
  6. Add the chopped mustard greens and mix well.
  7. Cover and cook for another 10 minutes or until the pumpkin is tender and the greens are wilted.
  8. Adjust seasoning if needed and serve hot.
