Kung Pao Beef Udon (Gōngbǎo Niúròu Udon)

Ingredients

  • 1 lb beef, thinly sliced
  • 8 oz udon noodles
  • 1/2 cup unsalted peanuts
  • 3-4 green onions, chopped
  • 3-4 garlic cloves, minced
  • 1/2 inch ginger, minced
  • 2-3 dried red chilies
  • 2 tbsp vegetable oil

Instructions

  1. Prepare the udon noodles according to the package instructions. Drain and set aside.
  2. Heat the vegetable oil in a wok or large skillet over high heat. Add the beef and stir-fry until browned. Remove the beef from the wok and set aside.
  3. In the same wok, add the garlic, ginger, and dried red chilies. Stir-fry for a minute until fragrant.
  4. Add the peanuts and green onions to the wok and stir-fry for another minute.
  5. Return the beef to the wok and add the cooked udon noodles. Stir in the Kung Pao sauce and toss everything together until well combined and heated through.
  6. Transfer to a serving dish and garnish with additional chopped green onions and peanuts if desired.
