Kung Pao Brussel Sprouts

Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1/4 cup peanuts
  • 2 green onions, chopped
  • For the sauce:
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/2 tsp cornstarch
  • 1/4 tsp red pepper flakes

Instructions

  1. In a small bowl, whisk together all the sauce ingredients and set aside.
  2. Heat the vegetable oil in a large pan over medium-high heat. Add the Brussels sprouts and cook, stirring occasionally, until they are golden and crispy, about 8-10 minutes.
  3. Push the Brussels sprouts to one side of the pan and add the garlic and peanuts. Cook for 1-2 minutes until the garlic is fragrant.
  4. Pour the sauce over the Brussels sprouts and toss to coat. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  5. Remove from heat and sprinkle with chopped green onions before serving.
