Kung Pao Chicken Panda Express

Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes
  • 3 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 1 bell pepper, diced
  • 1/2 cup unsalted peanuts
  • 4 green onions, chopped

Instructions

  1. In a bowl, mix the chicken with soy sauce, rice vinegar, hoisin sauce, cornstarch, sesame oil, and red pepper flakes. Let it marinate for 10 minutes.
  2. Heat 2 tablespoons of vegetable oil in a large pan over medium-high heat. Add the marinated chicken and cook until browned and cooked through. Remove from the pan and set aside.
  3. Heat the remaining vegetable oil in the same pan. Add the garlic, ginger, and bell pepper. Stir-fry for 2-3 minutes.
  4. Return the cooked chicken to the pan. Add the peanuts and green onions. Stir-fry for another 2 minutes.
  5. Serve the Kung Pao Chicken hot, over steamed rice.
