Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/2 cup unsalted peanuts
- 3 green onions, chopped
- 3 cloves garlic, minced

- 2 dried red chilies
- 1/2 red bell pepper, diced
- For the sauce:
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon hoisin sauce
- 1 tablespoon sugar
- 1 teaspoon cornstarch
- 1/4 cup chicken broth
Instructions
- In a small bowl, mix together the soy sauce, rice vinegar, hoisin sauce, sugar, cornstarch, and chicken broth to make the sauce. Set aside.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the dried red chilies, garlic, and ginger. Stir-fry for about 30 seconds until fragrant.
- Add the shrimp to the wok and stir-fry for 2-3 minutes until they are pink and opaque.
- Add the red bell pepper, green onions, and peanuts to the wok. Stir-fry for another 1-2 minutes.
- Pour the sauce over the shrimp and stir-fry for an additional 1-2 minutes until the sauce thickens and coats the shrimp and vegetables.
- Remove from heat and transfer to a serving dish. Serve hot with steamed rice.
