Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 1/2 cup unsalted peanuts
- 3-4 dried red chilies
- 3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 3 green onions, chopped
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1/2 cup chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon Chinese black vinegar
- 1 tablespoon sugar
- 1 teaspoon cornstarch
Instructions
- Heat 1 tablespoon of oil in a wok or large skillet over high heat. Add the shrimp and stir-fry until they turn pink and opaque. Remove the shrimp from the wok and set aside.
- Heat the remaining 1 tablespoon of oil in the same wok. Add the peanuts and dried chilies, and stir-fry until the peanuts are golden brown and the chilies are fragrant.
- Add the garlic, ginger, and green onions to the wok, and stir-fry for about 30 seconds.
- Add the diced bell peppers to the wok, and stir-fry for another minute.
- In a small bowl, whisk together the chicken broth, soy sauce, black vinegar, sugar, and cornstarch. Pour the sauce into the wok and bring to a simmer.
- Return the cooked shrimp to the wok and toss to coat in the sauce. Cook for another 2-3 minutes until the sauce thickens and the shrimp are heated through.
- Transfer the Kung Pao shrimp to a serving dish and garnish with additional chopped green onions and peanuts if desired.
