Kung Pao Shrimp Surprise (宫保虾仁惊喜)

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 1/2 cup unsalted peanuts
  • 3-4 dried red chilies
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 3 green onions, chopped
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/2 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon Chinese black vinegar
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch

Instructions

  1. Heat 1 tablespoon of oil in a wok or large skillet over high heat. Add the shrimp and stir-fry until they turn pink and opaque. Remove the shrimp from the wok and set aside.
  2. Heat the remaining 1 tablespoon of oil in the same wok. Add the peanuts and dried chilies, and stir-fry until the peanuts are golden brown and the chilies are fragrant.
  3. Add the garlic, ginger, and green onions to the wok, and stir-fry for about 30 seconds.
  4. Add the diced bell peppers to the wok, and stir-fry for another minute.
  5. In a small bowl, whisk together the chicken broth, soy sauce, black vinegar, sugar, and cornstarch. Pour the sauce into the wok and bring to a simmer.
  6. Return the cooked shrimp to the wok and toss to coat in the sauce. Cook for another 2-3 minutes until the sauce thickens and the shrimp are heated through.
  7. Transfer the Kung Pao shrimp to a serving dish and garnish with additional chopped green onions and peanuts if desired.
