Kung Pao Tofu Ramen (Gōngbǎo Dòufu Ramen)

Ingredients

  • 1 block of firm tofu, cubed
  • 4 packs of ramen noodles
  • 1/2 cup roasted peanuts
  • 3 green onions, chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2-3 dried red chilies
  • 2 tablespoons vegetable oil
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon cornstarch

Instructions

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. Cook the ramen noodles according to the package instructions, then drain and set aside.
  3. In a small bowl, mix the soy sauce, rice vinegar, sugar, and cornstarch to make the sauce.
  4. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the tofu cubes and cook until golden brown.
  5. Add the garlic, ginger, and dried red chilies to the pan and stir-fry for a minute.
  6. Pour the sauce over the tofu and stir to coat. Add the cooked ramen noodles and toss to combine.
