Ingredients
- 3 ripe bananas, mashed
- 2 cups rolled oats
- 1/3 cup coconut oil
- 1/4 cup honey
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the mashed bananas, oats, coconut oil, honey, cinnamon, vanilla extract, and salt until well combined.
- Drop spoonfuls of the cookie dough onto the prepared baking sheet, and flatten them slightly with the back of the spoon.
- Bake in the preheated oven for 12 minutes, or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
