Ingredients
- 1 whole chicken, cut into pieces
- 1 cup rice
- 1 onion, chopped

Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, carrots, and celery. Sauté until the vegetables are softened.

- Reduce the heat to low, cover the pot, and let the soup simmer for 30 minutes.
