Kurdish Spinach Pie (Sambûse)
Sambûse is a popular Kurdish dish that consists of a savory spinach filling encased in a crispy, flaky pastry. This delicious pie is perfect for a light meal or as a snack.
Ingredients
- 3 cups fresh spinach, chopped
- 1 onion, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 cup feta cheese, crumbled
- 1 package of phyllo dough
- 1/2 cup melted butter
Instructions
- In a pan, sauté the chopped onion in olive oil until translucent.
- Add the chopped spinach to the pan and cook until wilted. Season with salt, black pepper, cumin, and paprika.
- Remove the spinach mixture from the heat and let it cool. Once cooled, stir in the crumbled feta cheese.
- Preheat the oven to 375°F (190°C).
- Unroll the phyllo dough and cut it into 3-inch squares.
- Brush each square with melted butter and place a spoonful of the spinach filling in the center.
- Fold the squares into triangles and place them on a baking sheet.
- Bake for 20-25 minutes or until the sambûse are golden and crispy.
