Kurdish Spinach Pie (Sambûse)

Ingredients

  • 3 cups fresh spinach, chopped
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 cup feta cheese, crumbled
  • 1 package of phyllo dough
  • 1/2 cup melted butter

Instructions

  1. In a pan, sauté the chopped onion in olive oil until translucent.
  2. Add the chopped spinach to the pan and cook until wilted. Season with salt, black pepper, cumin, and paprika.
  3. Remove the spinach mixture from the heat and let it cool. Once cooled, stir in the crumbled feta cheese.
  4. Preheat the oven to 375°F (190°C).
  5. Unroll the phyllo dough and cut it into 3-inch squares.
  6. Brush each square with melted butter and place a spoonful of the spinach filling in the center.
  7. Fold the squares into triangles and place them on a baking sheet.
  8. Bake for 20-25 minutes or until the sambûse are golden and crispy.
