Kurma (armenian Lamb Curry)
Kurma is a traditional Armenian lamb curry that is rich in flavor and spices. This hearty dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 1/2 pounds lamb, cut into cubes
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground turmeric
- 1 cup chicken or beef broth
- 1/2 cup dried apricots
- 1/4 cup slivered almonds
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Season the lamb with salt and pepper.
- Heat the olive oil in a large pot over medium heat. Add the lamb and cook until browned on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the onions and garlic. Cook until softened.
- Stir in the tomato paste, cumin, paprika, cinnamon, cayenne pepper, and turmeric. Cook for 1-2 minutes.
- Return the lamb to the pot and add the broth. Bring to a simmer, then cover and cook for 45 minutes.
- Stir in the dried apricots and cook for an additional 15 minutes, or until the lamb is tender.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the kurma garnished with slivered almonds.
