Ingredients

  • 1 1/2 pounds lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground turmeric
  • 1 cup chicken or beef broth
  • 1/2 cup dried apricots
  • 1/4 cup slivered almonds
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Season the lamb with salt and pepper.
  2. Heat the olive oil in a large pot over medium heat. Add the lamb and cook until browned on all sides. Remove the lamb from the pot and set aside.
  3. In the same pot, add the onions and garlic. Cook until softened.
  4. Stir in the tomato paste, cumin, paprika, cinnamon, cayenne pepper, and turmeric. Cook for 1-2 minutes.
  5. Return the lamb to the pot and add the broth. Bring to a simmer, then cover and cook for 45 minutes.
  6. Stir in the dried apricots and cook for an additional 15 minutes, or until the lamb is tender.
  7. Adjust the seasoning with salt and pepper, if needed.
  8. Serve the kurma garnished with slivered almonds.
