Kutia Carnival

Kutia Carnival is a traditional Ukrainian dish often served during the Christmas season. This sweet wheat berry pudding is a staple at the Ukrainian Christmas Eve feast, known as Sviata Vecheria.

Ingredients

  • 1 cup wheat berries
  • 4 cups water
  • 1 cup poppy seeds
  • 1 cup honey
  • 1/2 cup chopped walnuts
  • 1/4 cup raisins
  • 1/4 teaspoon salt

Instructions

  1. Rinse the wheat berries and place them in a large pot with 4 cups of water. Bring to a boil, then reduce heat and simmer for 1 hour, or until the wheat berries are tender.
  2. While the wheat berries are cooking, place the poppy seeds in a dry skillet over medium heat. Toast the poppy seeds for 3-4 minutes, stirring frequently to prevent burning.
  3. Once the wheat berries are cooked, drain any excess water and transfer them to a large mixing bowl.
  4. Add the toasted poppy seeds, honey, chopped walnuts, raisins, and salt to the bowl with the cooked wheat berries. Mix well to combine all the ingredients.
  5. Refrigerate the kutia for at least 2 hours before serving. Serve chilled.
