Kutia Carnival
Kutia Carnival is a traditional Ukrainian dish often served during the Christmas season. This sweet wheat berry pudding is a staple at the Ukrainian Christmas Eve feast, known as Sviata Vecheria.
Ingredients
- 1 cup wheat berries
- 4 cups water
- 1 cup poppy seeds
- 1 cup honey
- 1/2 cup chopped walnuts
- 1/4 cup raisins
- 1/4 teaspoon salt
Instructions
- Rinse the wheat berries and place them in a large pot with 4 cups of water. Bring to a boil, then reduce heat and simmer for 1 hour, or until the wheat berries are tender.
- While the wheat berries are cooking, place the poppy seeds in a dry skillet over medium heat. Toast the poppy seeds for 3-4 minutes, stirring frequently to prevent burning.
- Once the wheat berries are cooked, drain any excess water and transfer them to a large mixing bowl.
- Add the toasted poppy seeds, honey, chopped walnuts, raisins, and salt to the bowl with the cooked wheat berries. Mix well to combine all the ingredients.
- Refrigerate the kutia for at least 2 hours before serving. Serve chilled.
