Kuzi (saudi Arabian Lamb And Potato Curry)

Ingredients

  • 1 lb lamb, cut into cubes
  • 2 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 2 cups chicken or lamb broth
  • 2 tbsp tomato paste
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the lamb cubes to the pot and brown on all sides.
  3. Stir in the ground cumin, coriander, turmeric, cinnamon, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  4. Add the tomato paste and stir to coat the lamb and spices.
  5. Pour in the broth and bring the mixture to a simmer. Cover and cook for 45 minutes, or until the lamb is tender.
  6. Add the diced potatoes to the pot and continue to cook, uncovered, for an additional 15 minutes or until the potatoes are cooked through.
  7. Season with salt and pepper to taste.
  8. Serve the Kuzi hot with rice or flatbread.
