Kuzi (saudi Arabian Lamb And Potato Curry)
Kuzi is a traditional Saudi Arabian dish that features tender lamb and hearty potatoes in a flavorful curry sauce. This dish is perfect for a comforting and satisfying meal.
Ingredients
- 1 lb lamb, cut into cubes
- 2 large potatoes, peeled and diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- 2 cups chicken or lamb broth
- 2 tbsp tomato paste
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the lamb cubes to the pot and brown on all sides.
- Stir in the ground cumin, coriander, turmeric, cinnamon, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the tomato paste and stir to coat the lamb and spices.
- Pour in the broth and bring the mixture to a simmer. Cover and cook for 45 minutes, or until the lamb is tender.
- Add the diced potatoes to the pot and continue to cook, uncovered, for an additional 15 minutes or until the potatoes are cooked through.
- Season with salt and pepper to taste.
- Serve the Kuzi hot with rice or flatbread.
