Ingredients

  • 4 slices of rye bread
  • 1 cup sugar
  • 1/2 cup raisins
  • 1 lemon, juiced
  • 1 gallon water
  • 1 packet active dry yeast

Instructions

  1. In a large pot, bring the water to a boil. Remove from heat and add the rye bread slices. Let it cool to room temperature.
  2. Once cooled, remove the bread slices and stir in the sugar, raisins, and lemon juice. Sprinkle the yeast over the mixture and cover the pot with a clean kitchen towel. Let it sit at room temperature for 2 days, stirring once a day.
  3. After 2 days, strain the liquid through a fine-mesh sieve into a clean container. Discard the solids and transfer the liquid to airtight bottles. Let it ferment in the refrigerator for another day before serving.
