Ingredients

  • 2 ripe plantains, peeled and sliced
  • 1 cup black-eyed beans, soaked overnight
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 1 teaspoon ground crayfish
  • 1 teaspoon red palm oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the soaked black-eyed beans, onion, tomatoes, bell pepper, and vegetable broth. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  2. Add the sliced plantains, ground crayfish, and red palm oil to the pot. Continue to simmer for another 20-30 minutes, or until the beans and plantains are tender.
  3. Season with salt and pepper to taste. Serve hot and enjoy!
