Kwacoco Beans (plantain And Beans Porridge)

Ingredients
- 2 ripe plantains, peeled and sliced
- 1 cup black-eyed beans, soaked overnight
- 1 onion, chopped
- 2 tomatoes, diced
- 1 bell pepper, chopped
- 2 cups vegetable broth
- 1 teaspoon ground crayfish
- 1 teaspoon red palm oil
- Salt and pepper to taste
Instructions
- In a large pot, combine the soaked black-eyed beans, onion, tomatoes, bell pepper, and vegetable broth. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Add the sliced plantains, ground crayfish, and red palm oil to the pot. Continue to simmer for another 20-30 minutes, or until the beans and plantains are tender.
- Season with salt and pepper to taste. Serve hot and enjoy!
