Kwacoco Ndole (fried Plantain With Spicy Shrimp Sauce)

Ingredients

  • 4 ripe plantains, peeled and sliced
  • 1 pound shrimp, peeled and deveined
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the sliced plantains and fry until golden brown on both sides. Remove from the skillet and set aside.
  2. In the same skillet, add the shrimp and cook until pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Add the chopped onion, diced tomatoes, garlic, and ginger to the skillet. Cook until the vegetables are soft.
  4. Stir in the paprika, cayenne pepper, and chicken broth. Bring to a simmer and cook for 5 minutes.
  5. Return the shrimp to the skillet and season with salt and pepper. Cook for an additional 5 minutes.
  6. Serve the fried plantains with the spicy shrimp sauce on top.
