Kwacoco Ndole (fried Plantain With Spicy Shrimp Sauce)

Ingredients
- 4 ripe plantains, peeled and sliced
- 1 pound shrimp, peeled and deveined
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 cup chicken broth
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the sliced plantains and fry until golden brown on both sides. Remove from the skillet and set aside.
- In the same skillet, add the shrimp and cook until pink and opaque. Remove the shrimp from the skillet and set aside.
- Add the chopped onion, diced tomatoes, garlic, and ginger to the skillet. Cook until the vegetables are soft.
- Stir in the paprika, cayenne pepper, and chicken broth. Bring to a simmer and cook for 5 minutes.
- Return the shrimp to the skillet and season with salt and pepper. Cook for an additional 5 minutes.
- Serve the fried plantains with the spicy shrimp sauce on top.
